As many of you already know, we have a YouTube Show called "Butter & Salt" - a cooking show that brings you into our kitchen where I teach you how to cook different dishes. Our most recent dish was on location in our friend's, Mark and Corina's, kitchen where we made Olive Garden's Zuppa Tuscana paired with our first attempt at a lasagna sandwich. The sandwich needs work so I'm really going to talk about the soup.

A while back, I taught Corina how to make a soup. It was so long ago, I can't actually remember what kind we made but it was good - I do remember that! This time, we had a request from Mark to make Zuppa Tuscana. I don't think I've ever had it at Olive Garden so I really don't have anything to compare it to but we all liked what it turned out to be. Kevin and I enjoyed it so much that I made it again a week later and put our own spin on it by adding tortellini and adjusting some of the ingredients.
You can check out the video on YouTube but beware! I enjoyed a glass of wine (or 4) when cooking and videoing that night so I accidentally skipped a couple steps. Please don't watch this episode expecting to get a cooking tutorial. Read the recipe if you'd like to try this soup for yourself.
I have attached a downloadable copy of my recipe and the tortellini variation here. You can also find the original recipe we used, on this blog High Heels and Grills.
Mangiamo!

P.S. Recent videos are being recorded and edited on my iPhone 7 while I have limited camera and editing software accessibility. Fingers crossed, we'll be back to normal (or better!) soon!
